Bread Machine Vegan/PB Buckwheat Oat Bread

I wanted a good recipe for bread, but I wanted one that was yeast-free, gluten-free (although we do eat Spelt and the occasional Nature’s Plus wheat cracker now), vegan/plant-based, healthy, and delicious.  Yes, I know I am asking for a lot.  To make things even more complicated, I opted to come up with a recipe that can be cook both in the oven and in a bread maker. Sure, everyone’s bread maker is different, but below is a base recipe I came up with to satisfy your tastebuds.

 (thank In the Each bread machine is different.  I used the Gluten-Free, Medium setting for my loaf, but advise you to consult your machine’s manual for specific instructions.  

As this is a bread machine recipe, it is designed for you to add the ingredients and then relax while delicious bread is being made.  Below are the ingredients I used. 

  • 1 1/2 cup – Buckwheat Flour
  • 1 1/2 cup – Oat Flour
  • 1 1/2 cup – Almond Mylk 
  • 1 cup – Water 
  • 1-2 Tablespoon – Psyllium Husk 
  • 1 Tablespoon – Apple Cider Vinegar
  • 1 Teaspoon – Baking Soda
  • 1-2 Teaspoons – Himalayan/Sea Salt 
  • 2 Tablespoons – Coconut Sugar 

Add all the wet ingredients into the bread machine.  In a bowl, mix all the dry ingredients and stir them together.  Add the dry ingredients into bread machine, turn it on and let the machine do its work. That’s it! When the bread is finished (mine took 3 hours), let it cool and then slice.

In future, I plan to try this in a mini oven on 325 degrees Fahrenheit using an 8×5 pan. In the meantime, I want to refer you to Mind Over Munch’s vegan bread recipe.  Although I have no affiliation with her, seeing her bread was the inspiration to my recipe.
